Maize opened it’s doors in Champaign on October 1, 2011 and began the effort of recreating traditional dishes and flavors from Mexico City, Michoacan and the mountains of a little farm in Guerrero Mexico. In the process, we discovered the love for traditional Mexican dishes within our eclectic Clientele and we work hard every day to improve their experience at Maize.
Maize's food is made in-house with the freshest ingredients. All corn tortillas—handmade for each order. We also offer gluten-free options so everyone can enjoy the food we loved growing up.

Our Menu is 90 percent gluten free and we strive daily to share our culture through our food and hope that by doing so we are able to learn from other cultures as well. We hope that you enjoy our version of traditional Mexican dishes, and thank you for being part of the Maize family.
