Our Humble Origins
Maize opened its doors in Champaign on October 1st, 2011 and began the effort of recreating traditional dishes and flavors from Mexico City, Michoacan and the mountains of a little farm in Guerrero, Mexico.
In the process, we discovered the love for traditional Mexican dishes within our eclectic clientele and we work hard every day to improve their experience at Maize.
We share our food. We share our home.
Our food is made in-house with the freshest ingredients. All corn tortillas are handmade for each order. We also offer gluten-free options so everyone can enjoy the food we loved growing up.
